Cheese-filled Kadayif

- 1 lb. pkg. kadayif dough (shredded phyllo dough) (defrosted and at room temperature)
- 1½ cubes or sticks unsalted butter (melted)
- 1½ to 2 cups Monterey Jack cheese (shredded)
Simple Syrup Ingredients:
- 2 cups water
- 2 cups sugar
- 1 lemon peel
- 1 lemon (juiced)
